- Preheat oven to 180°C.
- Wash and slice kale into bite-sized pieces.
- Cut the sweet potato into cubes and place on a baking tray to cook in the oven for 15 minutes.
- Meanwhile, mix the walnuts and maple syrup in a small bowl. Then roast gently in a small pan over low to medium heat. Keep stirring so the nuts don’t burn.
- Put the remaining ingredients all together in a salad bowl. Mix well, then toss in the sweet potato and walnuts.
