- Pre-heat oven to 180°C.
- Line a baking tray with parchment paper.
- Coat the sweet potato with the beans, oil, salt, pepper, and minced garlic. Spread on the baking tray.
- Bake 15 minutes or until golden and crispy.
- Meanwhile, mix the coconut yogurt and lemon together. Set aside.
- Remove baked sweet potatoes from the oven when done. Top with all the toppings and the yogurt mix.
