Method
- Halve avocados, remove seeds and scoop out flesh with a soup spoon.
- Place avocado in a medium-sized mixing bowl and mash with a fork or masher (keep the avocado a little chunky for texture).
- Add onion, tomatoes, garlic, coriander, parsley, lemon/lime juice, cumin, salt and pepper to the mashed avocados. Mix well.
- Scoop mixture into cos lettuce leaves and top with sliced black olives to serve.
