Toast the coconut flakes. Be careful not to burn them.
In a high-speed food processor/blender, add all the ingredients and process until well-combined. The mixture should be a little sticky but not too much. If the dates are quite moist, put mixture in the fridge for 1 hour to firm up a little.
Roll into bite-sized balls. Sprinkle with a little extra cacao powder and hide them!
Best when stored in an airtight container and refrigerated. Will keep for a few days (if they last that long!)
