Ingredients
- Avocado 1/2 pc
- Feta cheese 1/2 cup
- Fresh basil, shredded 6 leaves
- Gluten-free bread 2 slices
- Himalayan pink salt 1 pinch
- Ground pepper 1 pinch
- Balsamic vinegar 1 tbsp
- Lemon juice 1 splash

Method
- Toast your bread.
- Spread a layer of the feta on each slice.
- In a small bowl, scoop out and lightly mash the avocado flesh with a dash of lemon juice.
- Lightly spread the avocado on top of the feta. Top with the shredded basil leaves, salt and pepper, and a drizzle of Balsamic vinegar on each slice.
- Serve with a few cherry tomatoes for some extra zing!
