- Melt butter in a medium frying pan over medium-high heat. Add mushrooms. Cook, stirring occasionally, for 8 to 10 minutes or until lightly browned. Re-move to a bowl.
- Follow steps 1, 2 and 3 for Basic omelette (see related recipe). Top with mushroom mixture.
- Place pan under grill. Grill until omelette is lightly browned. Cut omelette in half and slide onto plates. Sprinkle with chives. Serve with Gluten Free bread or our special Seed Bread.
