Method
- Cook sweet potato until soft.
- Meanwhile, rinse and chop the rocket (aragula) and drain the chickpeas.
- When the sweet potato is cooked, blend with all other ingredients in a food processor or Thermomix until smooth.
- Pour dip into a serving bowl and enjoy with veggie sticks or crackers.
