Smoky Beetroot Dip

Method

  1. Preheat oven to 200 degrees.
  2. Toss the beetroot and onion in the garlic, oil, salt and pepper (and sumac, if desired).
  3. Place on a lined oven tray and cook for 30-40 minutes or until the beetroot is tender.
  4. Once cooked and cooled slightly, place all the cooked ingredients in a food processor along with the water and lime juice.
  5. Process until smooth. Season with salt and pepper, if needed.
  6. Serve alongside your favourite crackers or fresh, chopped vegetables.

Extra Notes

You can substitute 1 tsp smokey paprika for the sumac.
