Crunchy Beetroot Salad

Crunchy Beetroot Salad
Great as a side dish. Also makes a complete meal with a few healthy additions!

Method

  1. Toss all the ingredients in a large mixing bowl.*
  2. Season with salt and pepper.
  3. Serve as a side or with sweet potato fries, hummus and baba ganoush for a more filling meal (as suggested in the photo).

Extra Notes

*Instead of chopping/grating, you can toss all ingredients into a Thermomix or high-speed blender. Chop for around five seconds (depending on your blender) but do not over chop.
