Packed with iron and lithium, this tasty, healthy dip is a great mood enhancer and stabiliser. Excellent for detox and digestion, too!
Method
- Roast beetroot in an oven for about 15-20 minutes or until soft.
- When cooked, cool slightly and place in a food processor or Thermomix together will all the other ingredients. (Add the yoghurt if you want a creamier version.)
- Blend thoroughly until mixture is smooth.
- Pour into a serving bowl and enjoy with veggie sticks or seed bread.
