Basic Tomato Sauce

Method

  1. Heat the oil and saute the onion and garlic until soft and translucent.
  2. Add the chopped tomatoes and saute for 2-3 minutes until soft.
  3. Add the passata and tomato puree then simmer gently for 10-15 minutes until thickened.
  4. Add the basil, salt and pepper to taste.
  5. Cook for a few minutes, then serve with your favourite pasta topped with extra basil and grated Parmigiano or Parmesan cheese.
  • TIP: Add fresh chili or ½ tsp of chili flakes when sauteing the onions and garlic for a spicy arrabbiata sauce.
