Vegan Sweet Potato Nachos

Method

  1. Pre-heat oven to 180°C.
  2. Line a baking tray with parchment paper.
  3. Coat the sweet potato with the beans, oil, salt, pepper, and minced garlic. Spread on the baking tray.
  4. Bake 15 minutes or until golden and crispy.
  5. Meanwhile, mix the coconut yogurt and lemon together. Set aside.
  6. Remove baked sweet potatoes from the oven when done. Top with all the toppings and the yogurt mix.
  7. Serve and enjoy!
