Sweet Potato Brownies

Method

  1. Preheat oven to 180°C. Grease or line a baking dish with parchment paper.
  2. Blend all ingredients in a blender, Thermomix or large mixing bowl.
  3. Pour mixture into the baking dish and spread evenly into a layer of about an inch or less thick.
  4. Bake for 20-25 minutes. The edges should be dry.
  5. Remove from the oven and let cool for 15-30 minutes.
  6. Slice, serve and enjoy warm or at room temperature. (Will keep in the fridge for up to a week.)

Extra Notes

You can substitute almond butter with ¼ cup nut butter + ⅔ cup chopped nuts.
