Stuffed Cucumbers

Method

  1. Place cucumbers on a large plate with the flesh facing up.
  2. In a medium sized mixing bowl, add tomatoes, onion, basil, balsamic vinegar, olive oil, salt, pepper, spinach and garlic.
  3. Mix well and squeeze lemon to taste.
  4. Spread bruschetta mix onto the cucumber slices.
  5. Sprinkle with chives to garnish.
  6. Enjoy!
  7. Extra Notes

    You have the option to add hummus as a base layer for an extra protein hit!
