Quick Veggie Noodles

Method

  1. Preheat oven to 180°C. Line a baking tray with parchment paper.
  2. Soak the noodles in boiling water for 5 minutes, then drain and rinse with cool water.
  3. Place noodles in a large bowl with the rest of the ingredients. Mix well.
  4. Lay out the mixed noodles evenly on the baking tray and bake for 15 minutes.
  5. Optional to add salt and pepper tofu, salmon or organic chicken.
  6. Serve with a protein.

Extra Notes

Pad Thai or vermicelli are great rice noodle options. I also prefer to use 2 cups of sliced green leafy veggies in place of the mixed veggies.
