Method
- Preheat oven to 180°C. Line a baking tray with parchment paper.
- Soak the noodles in boiling water for 5 minutes, then drain and rinse with cool water.
- Place noodles in a large bowl with the rest of the ingredients. Mix well.
- Lay out the mixed noodles evenly on the baking tray and bake for 15 minutes.
- Optional to add salt and pepper tofu, salmon or organic chicken.
- Serve with a protein.
Extra Notes
Pad Thai or vermicelli are great rice noodle options. I also prefer to use 2 cups of sliced green leafy veggies in place of the mixed veggies.
