Pesto Cauliflower

Pesto Cauliflower

Method

  1. Preheat oven to 180°C. Line a baking tray with parchment paper.
  2. Slice the cauliflower into finger-thick pieces.
  3. Place on tray, drizzle with olive oil and vinegar, then top with walnut pesto.
  4. Bake for 15-20 minutes, until cauliflower is soft.
  5. Remove from oven and transfer to a serving dish. Top with capers and sprinkle with black pepper.

Extra Notes

This can also be served cold over rocket greens.
