Leek and Sweet Potato Soup

Method

  1. Clean leeks and sweet potatoes thoroughly.
  2. Prep all the veggies and sauté with ghee or olive oil in a big soup pot.
  3. Once sautéed, add the broth and bay leaf. Simmer for 20-30 minutes.
  4. When done, blend until smooth and garnish with yogurt and parsley.
  5. Enjoy!
