Kale Maple Salad

Method

  1. Preheat oven to 180°C.
  2. Wash and slice kale into bite-sized pieces.
  3. Cut the sweet potato into cubes and place on a baking tray to cook in the oven for 15 minutes.
  4. Meanwhile, mix the walnuts and maple syrup in a small bowl. Then roast gently in a small pan over low to medium heat. Keep stirring so the nuts don’t burn.
  5. Put the remaining ingredients all together in a salad bowl. Mix well, then toss in the sweet potato and walnuts.
  6. Enjoy!
