Bok Choy Stir-Fry with Sweet Potato Noodles

Method

  1. Cook the sweet potato noodles according to package instructions. They should be just slightly undercooked to prevent noodles from getting mushy. Strain and toss with sesame oil. Set aside.
  2. In a medium-sized pan or wok, add the olive oil and saute garlic and ginger over medium heat. Add the Bok choy and 1 tsbp of water, allowing to steam quickly.
  3. Add in the noodles and remaining ingredients. Mix thoroughly.
  4. Remove from heat and serve warm.
  5. Enjoy!

Extra Notes

Feel free to add more bok choy if you want more greens in this noodle dish.
