Method
- Cook the sweet potato noodles according to package instructions. They should be just slightly undercooked to prevent noodles from getting mushy. Strain and toss with sesame oil. Set aside.
- In a medium-sized pan or wok, add the olive oil and saute garlic and ginger over medium heat. Add the Bok choy and 1 tsbp of water, allowing to steam quickly.
- Add in the noodles and remaining ingredients. Mix thoroughly.
- Remove from heat and serve warm.
- Enjoy!
Extra Notes
Feel free to add more bok choy if you want more greens in this noodle dish.
