Blueberry Protein Muffins

Method

  1. Pre-heat oven to 180°C and line a muffin tin with muffin cases.
  2. In a stand up mixer or blender, mix the eggs, ghee or oil, vanilla and sugar.
  3. In a separate bowl mix the dry ingredients.
  4. Combine both wet and dry ingredients and mix well.
  5. Bake 20 minutes or until golden brown.
  6. Pour into the muffin tin, filling each cup to about ½ full.
  7. Bake 20 minutes or until golden brown.
  8. Remove from the oven and let cool.
  9. I like to serve out of the muffin case and upside down is pretty.
  10. Enjoy!
