Baked Sweet Potato Fries with Turmeric & Mint Raita

Method

  1. Preheat the oven to 200 degrees. Peel the sweet potato and cut into strips approx. 1 cm wide. Finely chop or mince 2 garlic cloves.
  2. Lightly toss the sweet potato with the coconut oil and minced garlic. Place on a greased baking tray or baking paper. Bake for 15 minutes then turn. Continue baking for another 10 -15 minutes or until tender.
  3. Place the yogurt, garlic, mint, turmeric and cumin in a food processor and blend until well-combined.
  4. Once the sweet potatoes are cooked, season with salt and pepper. Serve the Sweet Potato Fries on a plate drizzled with the raita.
