Asparagus Ribbon Salad

Method

  1. Trim off the hard ends of the asparagus. Using a vegetable peeler, ribbon the raw asparagus into long, thin strips.
  2. Peel and slice the grapefruit thin.
  3. Clean and slice the fennel thin.
  4. Slice the radish thin.
  5. Toss all together in a salad bowl or assemble on a large plate.
  6. Mix up the dressing ingredients and drizzle over before serving.

Extra Notes

The bigger the asparagus stalk, the easier to ribbon. You may also substitute mayo for the yoghurt.
