Artichoke Rocket Dip

Method

  1. Blend all ingredients in a high-speed blender until smooth.
  2. For a vegan version, you may swap the Parmesan cheese for nutritional yeast.
  3. For a pesto version, swap half of the rocket for basil leaves (25g rocket and 25g basil).
  4. Serve with veggie sticks or crackers.
