Need a pick me up or sweat healthy treat!

Method

  1. In a high speed blender or food processor, blend all ingredients except the 2 tablespoons of desiccated coconut. Until it resembles mince/sand that can be moulded. Don’t over process or you will have a paste.
  2. Line a loaf tin with baking paper, spread the mixture evenly. Press down to pack the mixture with the back of a wooden spoon or a glass.
  3. Refrigerate for one hour, remove from tin and slice into squares, sprinkle with the additional coconut.
