Method
- Heat the oil in a large pot and saute the onion and garlic until soft.
- Add the passata, vegetable stock and barley. Bring to the boil then simmer for 15 minutes.
- Add the mixed vegetables and cook for another 15 minutes or until the vegetables are tender and barley is soft.
- Add in the fresh herbs. Season with salt and pepper.
- Serve garnished with fresh herb and your favorite bread. Sourdough is great or some gluten-free pasta.
